Watching your friends or other half jetting off to a shiny, new destination doesn’t do anything at all for persistent wanderlust. Whether it’s lack of funds or annual leave, or perhaps another reason, it really doesn’t matter. Travel blues set in. Even if you’re the one venturing around the world, when the time comes to head back home those blues still make an appearance.
An easy way to stretch your travels out, or even to get a taste of your friend’s trip, is to try a new recipe out. I was recently given some dates from Egypt. They’re big, chunky ones that make the dates from English shops look like tiny dots. Not a huge fan of dates, I decided to create a naughty travel inspired treat. Naturally, I thought I’d share the recipe with you.
Recipe: Egyptian Cookies (makes 24)
♥ 75g of unsalted butter
♥175g of light brown sugar
♥ 40g plain flour
♥ 40g wholemeal flour
♥ ¾ tablespoon of bicarbonate of soda
♥ 150g of oats (rolled ones are best, but regular porridge oats will do)
♥ ½ teaspoon of salt
♥ 1 egg
♥ 1 tablespoon of pure vanilla extract (vanilla flavouring will do if need be)
♥ 175g of pitted dates
♥ 75 of good quality dark chocolate
♥ Preheat the oven to 180C. Melt the butter in a small saucepan over a low heat.
♥ Turn the heat off and then stir the sugar in until you have a smooth mixture.
♥ Whisk the egg in a small bowl and then add that to the big bowl, along with the vanilla and dates. Gently stir it altogether.
♥ Lightly grease a baking tray and/or cover it with baking paper. Spoon balls of the mixture onto the tray, keeping a bit of distance between each one.
Ta-da! Anytime you feel a pang of travel envy simply pop an Egyptian cookie in your mouth. They’re rumoured to be about 90 calories per cookie and with dark chocolate (said to be a healthier than milk chocolate) and dates (said to be fat free), it’s surely a totally acceptable snack?!
